Controlling the Flow...
The shape of the crystal wine glass, or any other wine glasses, is responsible for the flow of the wine into your mouth and consequently where the wine actually touches the various taste zones on your tongue. Your tongue has four taste zones: sweet, acid, salty and bitter. The sweets are located in the front or the tip of your tongue. The acidic and salty zones are located on both sides of your tongue and the bitter zone located toward the rear of your tongue.
